A special honey produced by bees using the secretion of an insect that lives in the trunk of pine trees. This insect feeds by sucking the sap from the pine tree and secretes the excess sap as a sweet substance. The insect secretes this liquid between July and October, which is collected by bees. It is produced in the regions of Kepsut, Balya, Ayvalık and Havran. Kızılcam (Pinus brutia) and Karacam (Pinus nigra) are found in these areas. The ability to store for years without spoiling or freezing is the most important characteristic of pine honey. Its colour is darker than that of flower honey. Although slightly less nutritious, it is particularly good for throat problems.
